Keep Calm and Cook Something: Easy Cupcake Recipes

Baking fluffy, moist cupcakes with delicious buttercream.....who can resist?

Everyone loves cupcakes. You can prepare cupcakes using cake mix or from scratch. Here are some tips that you can make your cupcakes fluffy and moist when you use cake mix:

(1) Use milk to replace water.

(2) Substitute butter with vegetable oil. But if you want to have a rich flavour, try using melted butter.

(3) Add one more egg to your cake mix.

I like making from scratch, but I also always have cake mix or brownie mix at home just in case I'm so lazy. My favourite brand must be Betty Crocker. White Cake Mix, Chocolate Cake Mix and my must-have Brownie Mix. I always have at least one box of the White Cake Mix as this one is very versatile to turn into whatever flavour I like:

(1) Add 1-2 tablespoon of cocoa powder/pandan powder/green tea or matcha powder/instant coffee powder/ovaltine powder and you can have chocolate, pandan, green tea, matcha, coffee, ovaltine cake as you like!

(2) Squeeze one lemon or orange juice and add up to the water required and then you can make lemon or orange cake.

(3) Add 1 teaspoon of vanilla essence oil or whatever essence you want, like banana, strawberry etc then you can make vanilla cupcakes or whatever flavours you like!

(4) Add food colouring to change the cake colour of your preference.

So you know why the White Cake Mix is always my must-have item now!
