(1) Cut your choice of meat (protein) into thin stripes or small pieces. As stir frying is a quick mixing in high heat, thin or small cutting helps the meat to cook throughly in very short period of time. The choice of meat you can choose can be beef, pork, chicken etc. If you don;t want meat, you can use tofu or even omit the meat but just just a mix of vegetables. The more colour of vegetables you use, the more beautiful your dish will be, and packed with more nutrients too!
(2) Prepare your vegetables. Choose different vegetables with different colours resulted in the more colourful and healthy dishes. Cut the vegetables into similar sizes as the meat (proteins) to ease cooking throughly. Also, choose some vegetables that are easily to cook through like bell peppers, asparagus, broccoli, carrots, mushrooms, onion, peas etc. Adding minced garlic and/or shallots would be a great way to increase flavours.
(3) Heat up your pan or wok.
(4) Add 1-2 tablespoon of cooking oil.
(5) When the oil is hot with smoke coming out, add the vegetables. Add vegetables that take longer time to cook first, then put easily cooked vegetables last. Stir frequently until they are almost done, pour all the vegetables in a bowl for later.
(6) Add a bit oil if needed. Heat the pan/wok again. When the oil is hot with smoke coming out, add the meat and stir frequently and throughly. Stir and cook until the meat are just cooked, then add the vegetables again. Add seasoning of your choice, like the very simple salt, or any sauce you like, then stir fry until well mixed and cooked, time to serve!
